configure.ac: update egrep -> grep -E

The "egrep" alias for "grep -E" is deprecated:

  $ egrep
  egrep: warning: egrep is obsolescent; using /bin/grep -E
  Usage: grep [OPTION]... PATTERNS [FILE]...
  Try 'grep --help' for more information.

The alternative "grep -E" is part of POSIX and should be even more
reliable. This commit finds & replaces them all in configure.ac.
